Deep-fried Risotto balls


Today's dish is a actually yesterday's dinner! We are making something incredible from leftovers. Yes, this can be done! Yesterday, we made a large batch of Mushroom and Swiss Chard Risotto. The recipe was provided by our friends at Compost in my Show and can be found here!

When we were too full to eat another bite, we put all the leftovers in a bowl, covered with a tight lid, and into the fridge for the night.

The next night, we assembled large deep fried risotto balls. While not exactly healthy, it's definitely a cheat meal!

Prep time: 10 minutes | Idle time: 1 hour | Cooking time: 20 minutes

Ingredients:

- 3 cups prepared Risotto

- 1 cup all purpose flour

- 1 cup plain bread crumbs

- 1 cup panko

- 2 eggs of egg substitute

- 2 cups of cooking oil (Canola, vegetable or sunflower)

- Marinara dipping sauce or pasta sauce

Prepare balling station by setting up three bowls, each for a separate stage. Beat eggs in one bowl, place flour in a second bowl, and mix bread crumbs and panko in the third bowl. Arrange bowls closely together in order to smoothly move from one bowl to the next.

Wet hands and place 1/3 cup of cold risotto in your hands. Press together into a ball form, toss in bowl of flour, so the ball is completely covered. Then toss in egg wash and cover completely. Finally, into mix of bread crumbs and generously cover so that only the bread crumbs are visible.

Repeat until all risotto is used up. Use more ingredients as needed in order to make as many balls as preferred. Place all balls onto a baking tray or plate lined with wax paper.

Leave in fridge for up to one hour. This is to ensure that the balls will not fall apart with deep frying. Pour oil in a pot and preheat to medium. Once the oil is hot, carefully place a ball into the bath. The balls do not need to be covered completely by the oil. If this is the case, move the ball around during cooking so that the brown evenly. Each ball should take about 3 minutes per side to achieve a perfect golden brown colour. Once brown on all sides, place the balls on a plate lined with paper towel and leave in oven set to 200f in order to keep warm. Repeat until all balls have been fried. Enjoy! :)
