Flavourful Tomato Chutney

This is one of our all time favourite recipes. The blend of flavours in this tomato chutney is out of this world. We mix savoury, salty, sweet, and tart ingredients together to make a spread worthy of any sandwich, burger or simply crackers.

Ingredients:

2 pound ripe San Marzano tomatoes 2 cooking apples, peeled, cored and grated, such as Fiji 1/2 small onion, finely chopped Zest and juice of 2 limes 1/2 cup white or brown sugar 1 tbsp. ground cinnamon 1/2 tsp. white pepper 2 garlic cloves, minced 2 tbsp. chopped fresh ginger 1/2 cup cider vinegar or white wine vinegar 1 tsp. salt

This recipe is so simple. The only real preparation steps include peeling and chopping the tomatoes, chopping the onions and grating the apples.

Preparation:

To peel the tomatoes: score an 'X' at the base of each tomato with a paring knife. Add to boiling water for 1 minute. Transfer to bowl of ice water. Once the tomato is cool the skin should come off fairly easily just by pulling from the X mark. If the skin remains tight against the flesh, drop it back in the boiling water for another minute, then repeat. Remove seeds from tomatoes and coarsely chop.

In a heavy saucepan over medium heat, add tomatoes, apples, onions, lime zest, lime juice, sugar, ground cinnamon, white pepper, garlic, ginger, vinegar and salt.

Bring to a gentle boil.

Reduce heat to low and simmer, stirring often, until chutney is thick and has a jam-like consistency, about 45 minutes to 1 hour.

Transfer to jars. Store in fridge and use within 2 weeks.
