Tomato and Broccoli quiche

We had a great time today in the Foodie Call MTL kitchen! We assembled a flaky, cheesy, warm Tomato and Broccoli quiche from scratch.
The dough was very easy to assemble, here is the simple recipe:
1 cup flour
1/4 tsp salt
1/4 cup butter (room temperature)
1/4 cup cold water (from refrigerator)
Mix flour and salt together.
Beat butter and water together with a fork to thicken.
Pour into flour and mix with fork.
Use your hands and play around with the dough until a shiny, firm ball remains!

Once the dough is ready, we can start molding it around a pie baking sheet.

The secret to the Foodie Call MTL quiche: We smear a layer of dijon mustard on the bottom, but that's just between us ;).

Next we throw on top a layer of diced oinons.

Then it gets really interesting, with chunks of goat cheese positioned evenly (?) in the quiche.

The tomatoes are the tricky part. Start with two tomatoes from the vine. Cut into quarters and remove the seeds. Then sprinkle with sea salt and allow to rest for 10 minutes in a colinder. The salt draws out the water so that the quiche isn't soggy!

Ingredients:
1 quiche crust
1 tablespoon Dijon Mustard
1 onion, diced
2 vine tomatoes, quartered
200 grams goat cheese
1 cup shredded cheddar cheese
1 cup broccoli florets
1 cup milk
3 eggs
1/2 tsp salt
1/4 tsp pepper
Set oven to 375 degrees Fareinheit.
Prepare quiche crust as mentionned above.

Cut broccoli into 1/2 inch chunks and steam until bright green, but still crunchy.
Smear a layer of Dijon Mustard, distribute onions and position goat cheese in chunks on top of onions.
Position preparred tomatoes in between knooks of goat cheese. Add on brocolli chunks where there is any room left.
Whisk together milk, eggs, salt, pepper, cheese. Pour batter slowly into quiche while distributing batter evenly between ingredients.
Bake for 40 - 45 minutes or until a toothpick comes out clean.
Cut into slices and inhale.
