Vegan Tzatziki!

This recipe is the definition of having fun and playing in the kitchen! The base of the recipe uses cashews instead of the traditional Greek yogurt. The fun part is trying to extract as much liquid out of the cucumbers as possible ;) The tzatziki is also completely vegan!

Ingredients:

2 seedless cucumbers

1 cup raw, unsalted cashews

2 garlic cloves

3 tablespoons olive oil

½ teaspoon of salt

4 tablespoons of lemon juice (half a lemon)

2 tablespoon of lemon zest

1 pinch of black pepper

2 Tablespoons of fresh parsley

2 Tablespoons of fresh mint

1 teaspoon of dried oregano

Start by peeling the skin off of the cucumbers:

From here, take the peeler and peel long strips from the flesh of the cucumbers until you arrive at the seeds. Proceed to take off the flesh from all sides. Once the seeds are reached from every side, discard the centre (or chop into pieces and keep as a yummy, healthy snack).

You will be left with three mounds from the cucumbers: skin, flesh, and seeds.

Take only the flesh part and squeeze out as much liquid as possible with your hands, over a bowl. Set aside the remaining liquid.

Throw cashews into a powerful blender, and blend into a powder.

Add the cucumber flesh, garlic, olive oil, salt, lemon juice, lemon zest, pepper, and oregano. Start to blend. If the mixture does not blend, mix with a spatula and try again. If the mixture still doesn’t blend, add in a couple tablespoons of the cucumber water at a time. Once the mixture starts to blend do not add in any more cucumber water or the tzaziki will become too wet. Adjust taste by adding in another dash of lemon juice, olive oil or oregano.

Chop mint and parsley coarsely and add into mixture. Pulse for a few seconds to incorporate:

The finished product! Add in a piece of mint on top for presentation ;)
